Nancy builds the case for canning, details how to gather equipment and supplies, provides the steps for getting started and explains all the safety measures that guard against food poisoning. She’s even included recipes for hot salsa, quick pickles, and microwave apple butter.
My favorite vegetable to can has always been tomatoes, but my first attempt at it was similar to running around a hamster wheel. Because I wasn’t able to judge how many jars I needed to can my tomato harvest, I ran out of jars before I used up all the tomatoes. Then I had to run to the store to buy more jars. Then I needed more tomatoes to fill the extra jars…
